Tomato ketchup production in Quebec reportedly started in the early 1800s. Green ketchup, made from green tomatoes, has become popular due to the late ripening of certain tomatoes. Quebec style fruit ketchup is said to have originated in the 1960s.
Relish
The term relish, designating the cucumber and bell pepper condiment, is typical of North America and first attested to in 1889, in a novel by Jules-Verne, set in Lower Canada!
Chutney
Chutneys originated in India! Chutneys have been eaten in Quebec since the British brought them from their colonies in India.
Pickling
The method of preserving food with vinegar is said to be the origin of our famous pickles. French settlers are said to have brought this method from France to our shores!
